Plant-Based for Professionals
For chefs and caterers looking to add or expand their vegan, vegetarian or plant-based offering, an introduction to the ingredients, recipes and techniques being used in vegan cookery.
Covering nutrition, novel ingredients, meat, dairy and egg substitutes, as well as pure plant based dishes. If you're unsure about how to use xanthan gum, jackfruit or aquafaba in casual or fine dining, or concerned about proteins and nutrition, looking for recipes or inspiration, then this course is for you.
Held in our purpose-built teaching kitchen, for up to six participants. There will be demonstrations, participation and food to taste, includes lunch and refreshments.
